Urlai Roast

Potato Roast with Boiled baby potatoes tossed in home made masala, onions and tomatoes. Best Served with rice or appams.

Ingredients

  • 2 whole red chillies
  • 1 tblsp coriander seeds
  • 1 inch piece ginger
  • 3 cloves of garlic
  • 1 stick of cinnamon
  • 4 green cardamom pods
  • 6 cloves
  • 1 star anise
  • 1 tsp black pepper corns
  • 4 stalks of curry leaves
  • 1/2 tsp turmeric powder
  • 1 grated coconut
  • 500 grams small potatoes, boiled in salted water
  • 1 tsp masala
  • 2 Tbsp oil
  • 4 chopped onions
  • 3 chopped tomatoes
  • 1/2 tsp ginger garlic paste
  • 3 slit green chillies
  • 5-6 curry leaves
  • 1/4 tsp turmeric powder
  • 2 tsp red chilli powder
  • 4 tsp coriander powder
  • 1/2 cup of water
  • Coriander leaves
  • salt to taste

Method

  • Make the masala by dry roasting all the ingredients apart from the coconut until fragrant. Remove and keep aside to cool
  • In the same pan dry roast the coconut until brown. Set aside on a plate to cool.
  • Grind both the spices and the coconut together and keep aside.
  • In a large pan heat oil and add chopped onions, ginger garlic paste, green chillies, curry leaves and saute.
  • Add the turmeric powder, red chilli powder and coriander powder and saute until fragrant.
  • Add in one tsp of the masala and saute.
  • Add in water and make a slurry of this masala. Drop in the potatoes and cook for at least 10 minutes until each potato is covered with the masala. Adjust for seasoning.
  • Sprinkles coriander leaves to serve.
