Nilgiri Vegetable Korma

A hearty dish with chapatis for when you are short on time or just craving some soul food.

Ingredients

  • 500 g mixed seasonal vegetables (Chopped in cubes)
  • 1/2 tsp turmeric
  • 1 tsp jeera
  • 2 crushed cardamoms
  • 2-4 cloves
  • 1″ cinnamon
  • 2 medium onions, chopped
  • 2-3 green chillies
  • 1 tsp ginger-garlic paste
  • 150 g fresh spinach
  • 10-12 mint leaves
  • 4-5 tbsp, chopped corriander leaves
  • 1 cup coconut milk
  • 1 tbsp lemon juice
  • Salt to taste

  Prep: 15 min                    Cook: 15 min                          Ready In: 30 min

Method

  • Grind spinach, mint & corriander leaves into a paste. Keep aside.
  • Splutter jeera, cardamom, cloves and cinnamon.
  • Add slit green chillies & onion. Saute for a couple of minutes.
  • Mix in the vegetable pieces and stir fry with turmeric.
  • Add the green mint-corriander paste and saute well. Add a little water if required. Salt to taste. Cook till vegetables are done
  • Pour in the coconut milk and just bring to boil. Mix the lemon juice
