Apple Basundhi

A creamy, delicate Tamilian Dessert. A twist of Apples to the all time favourite Basundi

Ingredients

  • 600 ml whole milk
  • 400 ml condensed milk
  • 2 medium apples, peeled and grated
  • 1 tsp ghee
  • 8 cardamom pods, crushed
  • 1 tsp raisins
  • 1 tsp pistachio
  • 1 tsp cashewnut
  • 1 tsp almonds, blanced and peeled
  • A pinch of saffron
  • A pinch of salt

Method

  • Start by boiling the whole milk for at least 20 minutes or until the milk is reduced to 3/4.
  • Remove 2 tblsp of that milk and soak the saffron in it
  • Into the boiled milk add in the condensed milk and the grated apples. Cook for 10-15 minutes
  • Add in half the crushed cardamom pods and the saffron and stir well. Let the milk come to a boil. Add in the almonds and pistachios and continue cooking for 2-3 minutes.Turn off the heat.
  • In a separate saucepan add in the ghee and fry the raisins and the cashew nuts. Add this and the remaining cardamoms into the milk mixture.
  • Remove from heat and refrigerate for 4 hour or overnight. Sprinkle with more almonds before serving.
